Pimento Cheese Sandwich Spread Masters Style

4 oz cream cheese 1/2 cup mayo 1/2 cup sour cream 1/4 tsp garlic salt 1/4 tsp onion powder 1/4 tsp smoked paprika

1 cup freshly shredded parmesan cheese 4 cups finely shredded sharp cheddar cheese 4 oz diced pimento

Cream the cream cheese, mayo, and sour cream. Add the spices.

Grate the cheeses and add. Mix with a spoon or spatula.

See the blog post about the cheese equivalents. i.e. 4 cups of fresh finely grated cheddar may not be the same as 4 cups of packaged shredded cheese.

If you use packaged shredded cheddar, you might want to add just 2 cups to start with and then see if you need more since it's bulkier.

Add the diced pimento. Reserve the liquid if you like and see if it needs it after mixing. Don't use an electric mixer for this part for sure!

 I used the pimento juice and all. Store in the refrigerator. I will thicken up some in the frig also.

 If you like thinner, add a little more mayo or 1 T of milk. For thicker, add more cheddar cheese.
