Bring to a boil and simmer until fork tender

TIP! Place a wooden spoon in the pan to keep it from boiling over

Drain the liquid, mash up a "little" bit and drain again

Remove from heat, add butter, mayo, egg, part of sharp cheddar cheese, salt and pepper

Pour in a greased cast iron skillet or cassserole dish

Sprinkle crushed buttery crackers, rest of the cheese and melted butter on top 

Bake until bubbly, and golden brown. 

Serve as a side or main dish. Enjoy!
