Chicken Spectacular

This is a chicken casserole recipe I got from a small restaurant many years ago. It's really easy to make especially if your start with rotisserie chicken)) Great as a main dish with a salad or even a side dish.

Ingredients

  • 3 cups Chicken Rotisserie chicken - original, lemon-pepper or herb.
  • ½ cup Onion Yellow or white.
  • 1 T Butter
  • 1 Pkg Ben's Original Ready Rice Long Grain & Wild
  • ½ cup Mayonnaise
  • ½ cup Sour Cream
  • 1 can Cream of Celery Soup
  • 1 can Water Chestnuts 8 oz
  • 1 can French Style Green Beans 14.5 oz
  • 4 oz Pimento 4 oz
  • 1 cup Shredded Cheddar Cheese

Instructions

  • Remove meat from a rotisserie chicken and chop into small pieces. Should yield about three cups.

  • Prepare rice according to package and add to chicken.

  • Saute 1/2 cup chopped onion in 1 T of butter, add to chicken. ( You could use margarine or oil instead of butter)

  • Drain sliced or chopped chestnuts and add to chicken.

  • Drain french style green beans and add to chicken.

  • Add jar of chopped pimento.

  • Add the can of Cream of Celery Soup

  • Add mayonnaise.

  • Add sour cream.

  • Mix together and pour in a greased casserole dish or skillet. Grease with butter, cooking oil, or cooking spray. Recipe made enough to make two pans for our family. One for dinner and one for the freezer.

  • Top with shredded cheddar cheese.

  • Bake at 350° for about 30 minutes. Serve hot.

Notes

Note: The servings and nutritional calculations are only rough estimates.
You could substitute Ben's Original Ready Rice for almost any flavor, or use the boxed quick-cook version which the original recipe called for. It just wasn't available at my store.
