Homemade Vegetable Beef Soup Recipe Easy to Make! No Fancy Ingredients

– 1 1/2 lb stew beef – 32 oz beef broth – 4 14.5 oz cans of diced tomatoes – 4 cans water Continued

– 1 package Knorr Vegetable Mix – 1 28 oz bag of frozen vegetables for soup – 1/2 onion (or more) – 2 stalks of celery (or more) – salt & pepper to taste – 2 T vegetable oil

Brown stew beef in 2 T of vegetable oil. Drain any excess oil. Chop beef into smaller pieces if desired. Do this before or after browning.

Add 4 cans of tomatoes to a large pot along with 32 oz beef broth Add 28 oz of frozen soup vegetables Continued

Add 1/2 chopped onion and 2 stalks chopped celery. Add more if desired. Add browned beef to pot. Add 1 pkg Knorr Veg Mix

Add 4 tomato cans of water. Salt and pepper to taste. Simmer for at least an hour so beef can become tender. Longer if needed.

Serve with hot cornbread or crackers.  Recipe makes a lot! Freeze leftovers in 1 to 2 portions. Makes it easy to reheat in the microwave later.
