Ingredients

– 1 1/2 lb stew beef
– 32 oz beef broth
– 4 14.5 oz cans of diced tomatoes
– 4 cans water

– 1 package Knorr Vegetable Mix
– 1 28 oz bag of frozen vegetables for soup
– 1/2 onion (or more)
– 2 stalks of celery (or more)
– salt & pepper to taste
– 2 T vegetable oil

Brown stew beef in 2 T of vegetable oil.
Drain any excess oil.
Chop beef into smaller pieces if desired. Do this before or after browning.

Add 4 cans of tomatoes to a large pot along with 32 oz beef broth
Add 28 oz of frozen soup vegetables

Add 1/2 chopped onion and 2 stalks chopped celery. Add more if desired.
Add browned beef to pot.
Add 1 pkg Knorr Veg Mix

Add 4 tomato cans of water.
Salt and pepper to taste.
Simmer for at least an hour so beef can become tender. Longer if needed.
