Easy Chicken Salad from Leftover Roast Chicken
Easy chicken salad recipe made from leftover roast chicken. Just chop the chicken, add Mayo, sour cream, sweet relish and a few other seasonings for a tasty salad or sandwich.

Chop the Chicken into small bite-size pieces. I prefer using a knife but you can use a chopper or food processor. Just take care not to chop it too fine.
Mix mayonnaise, sour cream and sweet relish with chicken.
Add 1 tsp of spicy mustard (taste and add more if needed)
Add salt, pepper, garlic salt, dill weed and smoked paprika to taste. The amount of seasoning will depend on the how the chicken was cooked. Taste along the way!
Serve on a bed of lettuce or make sandwiches.
