Easy Chicken Salad
Here’s an easy chicken salad recipe made from leftover roast chicken. It has mayonnaise, sour cream, sweet relish, and a few other things for taste.
Easy Chicken Salad
Ingredients
Serve it on a bed of lettuce or make delicious sandwiches with your favorite bread.

How many times do you put something in the refrigerator thinking “I’ll make something with that.” Then, a week later, you discard it. I do it all the time! And it’s terrible to waste good food. So I’m trying to do better!
I have a friend who saves little tidbits of everything! She keeps it all in the freezer and then comes up with the best vegetable soups and stews ….all made from leftovers. So, I”m striving to do better.
Roast Chicken
Now that our household is just two, a roast chicken serves us well. My husband can eat a lot, but there is always leftover chicken. We (he) cooked one in the air fryer the other night and it turned out great. We ate all we wanted, but there was still leftover chicken.
My mother always taught me to never store anything in the refrigerator on the bone, like chicken or turkey, and to remove the meat from the bone first. So I did. It’s a job that I do not like, but I do it.
I wasn’t sure how much chicken salad I could make with these leftovers, but it looked like an ample amount.
The leftover roast chicken yielded more than expected. It was almost three cups! Enough for an easy chicken salad recipe with sour cream and mayonnaise.
Chop the Chicken
I prefer to chop the chicken with a knife instead of using a chopper or food processor. We like small bite-size pieces and using a chopper usually results in finely chopped chicken. It’s just a preference)))
Add other ingredients
Add the mayo, sour cream, sweet pickle relish, and spicy brown mustard. Prepare to do a lot of tasting! You may want more mustard, just go slow and don’t overdo it.
Out of sour cream? You can substitute plain yogurt for chicken salad with mayo and sour cream.
Add the other seasonings in small amounts and continue to taste. We don’t care for much garlic in our food, so I used just a dash or two. We do like the taste of dill and smoked paprika along with salt and pepper, so I seasoned it with more with them.
Sprinkle a bit of smoked paprika on top too as a garnish. Stir well and serve with crackers on a bed of lettuce or make hearty sandwiches using your favorite toasted bread.
This is an easy chicken salad recipe that makes a good base chicken salad. You can always add other ingredients. Some of my favorite extra ingredients include chopped tart apples, crisp celery, grapes, and even toasted pecans. Do you add other things to your chicken salad? Leave us a note!
This easy chicken salad with roast chicken can also be made from leftover turkey. And if you don’t have roast chicken, just boil some until tender. I haven’t tried the recipe using leftover fried chicken, but if you removed the skin and crust, that should work too!

Easy Chicken Salad from Leftover Roast Chicken
Ingredients
- 2 ½ -3 cups Cooked Chicken Leftover roasted chicken, chopped. Skin removed.
- ½ cup Mayonnaise
- ⅓ cup Sour Cream
- 1 tsp Spicy Brown Mustard
- ⅓ cup Sweet Pickle Relish
- Salt To Taste
- Pepper To Taste
- Garlic Salt To Taste
- Smoked Paprika To Taste
- Dill Weed To Taste
Instructions
- Chop the Chicken into small bite-size pieces. I prefer using a knife but you can use a chopper or food processor. Just take care not to chop it too fine.
- Mix mayonnaise, sour cream and sweet relish with chicken.
- Add 1 tsp of spicy mustard (taste and add more if needed)
- Add salt, pepper, garlic salt, dill weed and smoked paprika to taste. The amount of seasoning will depend on the how the chicken was cooked. Taste along the way!
- Serve on a bed of lettuce or make sandwiches.
