Equipment

  • 1 8" x 8" Glass Baking Dish

Instructions

  • Blend oats, protein powder, and cinnamon until smooth. I used a Ninja blender.
    Add eggs, cottage cheese, honey, and vanilla and blend.
    Gently fold in blueberries
    Pour into a prepared 8" x 8" glass dish coated with cooking spray or butter.
    Bake 20-30 min in 325° oven, or until a toothpick inserted into the center comes out clean.
    Allow to cool for a few minutes before slicing into four pieces.
    Serve warm, or at room temperature.
    Drizzle a little bit of honey on top if desired.

Notes

What would do differently next time? Probably not blend everything together in a blender and just stir the ingredients to mix. It should yield a chunkier result which might be a nice texture.
