Tangy Pimento Cheese
This is a tangy pimento cheese spread that is great for dipping when freshly made, or stored in the refrigerator for sandwiches. It is a little firmer when stored in the frig.

- 3 cup medium cheddar cheese shredded Tillamook
- 1 cup extra sharp white cheddar cheese shredded Cabot
- 4 oz cream cheese softened
- 1 cup Dukes Mayonnaise
- 4 oz diced pimento drained
- 1 T apple cider vinegar
- 1 tsp sugar substitute Swerve
- Salt and Pepper to Taste
Allow cream cheese to soften at room temperature. Grate the cheese. Mix all the ingredients until well blended.Store in the refrigerator in a tightly covered container.
