Brown ground beef and drain well. Add to 4 qt slow cooker (crockpot). Add 2 cans of diced tomatoes, 2 tomato cans of water, 2 cans of red chili beans, 2 packets of chili seasoning. Turn crockpot on high until te mixture is hot. then turn down to low and keep there until ready to serve. Cook for 2 to 6 hours. You can also cook this in a stock pot on the stove and just simmer for a while. Simmering in the crockpot for a few hours develops the flavors. If you like the chili thicker, mix a couple of tablespoons of cornstarch with a little water or liquid from the chili, add it back to the chili to thicken it. Repeat if necessary to get the desired thickness. Serve hot with crackers or cornbread.
I like to serve chili with a dollop of sour cream and a sprinkling of grated sharp cheddar cheese.
