Forgive me for calling this Toucan Chili—it was just a whim! The name popped into my head while thinking about how simple this recipe is, with just 2 of everything. It made me think of “two can” and, well, the rest is history. Even if the name is quirky, the chili is seriously delicious and perfect for a cozy night in or game day!

Toucan Chili is incredibly easy to make—just toss everything into a crockpot! It fills a 4-quart crockpot almost to the top. Start by cooking it on high until it heats through, then turn it down to low. Let it simmer for a couple of hours. This is one of those meals that can simmer all afternoon or be ready in less time if you’re hungry and ready to dig in!
If you prefer your chili thick, simply mix a little cornstarch with water or some liquid from the chili. Stir until smooth and lump-free, then add it to the chili until you reach your desired thickness. Cornstarch works better than flour because it blends in smoothly without clumping.
Serve it hot with crackers or cornbread. Now you can make plain cornbread like I did on Saturday, or go a step further and make Kentkucky Cornbread. Yummy!
Toucan Chili is also fantastic with corn chips! I love adding a dollop of sour cream on top and sprinkling it with some sharp cheddar cheese. Enjoy!

- 2 lb ground beef browned and drained
- 2 cans diced tomatoes 14.5 oz plain or seasoned
- 2 cans water 14.5 oz
- 2 cans red chili beans 15.5 oz
- 2 packets McCormick Chili Seasoning mild or hot, or one of each!
Instructions
- Brown ground beef and drain well. Add to 4 qt slow cooker (crockpot). Add 2 cans of diced tomatoes, 2 tomato cans of water, 2 cans of red chili beans, 2 packets of chili seasoning. Turn crockpot on high until te mixture is hot. then turn down to low and keep there until ready to serve. Cook for 2 to 6 hours. You can also cook this in a stock pot on the stove and just simmer for a while. Simmering in the crockpot for a few hours develops the flavors. If you like the chili thicker, mix a couple of tablespoons of cornstarch with a little water or liquid from the chili, add it back to the chili to thicken it. Repeat if necessary to get the desired thickness. Serve hot with crackers or cornbread.
