Whoopie Pies: Reduced Sugar

This recipe is from Pillsbury and was simple to make. But I think next time, I'll just use regular cake mix and frosting versus the more expensive sugar-free versions.

Ingredients

  • 1 box Pillsbury Zero Sugar Devil's Food Cake Mix
  • 3 eggs
  • ¾ cup water
  • ½ cup vegetable oil
  • 8 oz cream cheese softened
  • 1 tub Pillsbury Zero Sugar Vanilla Frosting I used keto-friendly vanilla

Instructions

  • Preheat oven to 350° and prepare cookie sheets with parchment paper.
    Beat cake mix, eggs, water, and oil for about 2 minutes. Scrape down bowl.
    Drop 2 T of batter onto cookie sheet two inches apart. Spread batter into a circle of 2.25" Bake 7-9 minutes or until done. Cool on cookie sheet for a couple of minutes, then transfer to a rack for complete cooling.
    Beat softened cream cheese. Add canned frosting and cream well.
    Spead 2 T of frosting on the flat side of whoopie pie top with another, rounded side up. Press together lightly.
    Wrap individually in plastic wrap or place in small bags. Store in refrigerator.

Notes

The recipe stated 24 whoopie pies, but mine made 18. According to the package one whoopie pie would be 200 calories (1 of 24).
