A Coconut, a Palm Tree, and a Little Rum in Belize
We just returned from a Caribbean cruise, and instead of trying to recap the entire trip in one long post, I decided it would be much more fun to share the little moments — the ones that made us smile.
This one happened during our Caribbean cruise stop in Belize, and it all started with Carrie spotting something in the sand.
A Fresh Coconut in Belize
We were walking along the beach in Belize when Carrie saw it first — a bright green coconut lying right there in the sand.
Of course she picked it up.
It looked so fresh and almost polished by the sun, like it had been placed there just for us. Then we both looked up — and realized we were standing directly beneath a tall coconut palm loaded with coconuts still hanging high in the tree.
Now here’s something to think about…
A coconut can weigh anywhere from two to four pounds. Imagine one of those dropping from that height!
That would definitely wake you up faster than the cruise ship alarm clock.
We laughed… but we did casually step out from directly underneath that tree.
Green Coconut vs. Brown Coconut: What’s the Difference?
My experience with “fresh coconut” has always been the brown kind you find at the grocery store — hard shell, thick white flesh, and creamy coconut milk inside.
But a green coconut drink in Belize is something entirely different.
Green coconuts are young coconuts. At this stage, they’re filled with coconut water — light, refreshing, and slightly sweet. The flesh inside isn’t thick and firm yet. Instead, it’s thin, soft, and almost gel-like. (Remember Tom Hanks in Cast Away!)
As coconuts mature, the water gradually turns into the solid white meat we’re more familiar with, and the outer husk eventually dries and turns brown.
So what Carrie found was a coconut in its early stage — truly fresh coconut in Belize, straight from the source.
From Palm Tree to Belize Beach Cocktail
Naturally, spotting that coconut led us to a nearby stand where locals were preparing fresh coconut drinks.
With a few swift chops of a machete, they lopped off the top, poured in a splash of coconut rum, inserted a straw, and handed it over.
It doesn’t get much fresher than that.
I will admit though… as adventurous as we were feeling, I ultimately settled for a Belize beach cocktail — a perfectly icy piña colada served with a wedge of pineapple.
And honestly? Sitting there on the sand with palm trees swaying overhead, that drink in hand, and the Caribbean breeze blowing… it felt just right.
Small Moments Make the Trip
Sometimes the most memorable parts of travel aren’t the big excursions or scheduled activities.
Sometimes it’s:
- A fresh coconut in Belize
- A palm tree overhead
- A beachside drink
- And a quick laugh about what might have happened if gravity had other plans
