Old Fashioned Brown Butter Oatmeal Cookies

It’s always nice to get a call from your daughter that starts with, “Come up and try this!”

And of course, we always happily comply! Especially when we know she’s been baking.)))

Today, Carrie had made Brown Butter Oatmeal Cookies, and let me tell you, they were delicious! Still warm from the oven, soft and chewy, with a sweet vanilla icing on top.

Carrie has been on a brown butter kick lately, and I’m certainly not complaining!

A Little Taste of Nostalgia

My first thought after tasting one of these cookies was a warm Little Debbie Oatmeal Creme Pie.

Brown Butter Oatmeal Cookies – Soft, Chewy, and Worth Every Bite!

Now, I know an oatmeal creme pie has that sweet cream filling sandwiched between two cookies, and these don’t. But something about the flavor and soft, chewy texture reminded me of one.

And I do love a good oatmeal creme pie!

As a matter of fact, not too long ago I went searching for a Little Debbie Oatmeal Creme Pie copycat recipe. I found one, bought all the ingredients, and was ready to give it a try.

Then I got to looking at the nutritional information.

Now, I’m not one to pass up a good-tasting treat just because it has a few extra carbs. But that particular recipe was so far over my personal red line that I decided to leave it alone.)))

So the ingredients are still sitting in my pantry, and those oatmeal creme pies never got made.

I haven’t calculated the carbs in Carrie’s brown butter oatmeal cookies, but I can tell you this: they were worth enjoying in moderation!

The Secret Is in the Brown Butter

I think the real secret to these cookies is the brown butter. That, and the spices, of course!

If you’ve never baked with brown butter, it’s simply butter that’s been heated until the milk solids turn golden brown. It develops a wonderful rich, nutty flavor that you just don’t get from regular melted butter.

And the cinnamon adds just the right amount of warmth without being overpowering.

It’s a simple change, but it makes a big difference in the flavor of these cookies.

Carrie has been experimenting with brown butter in her baking lately, and after tasting these, I can certainly understand why!

Soft, Chewy, and So Good!

The cookies were still warm when we got there, and they were absolutely delicious.

Soft and chewy on the inside, with plenty of oatmeal texture and a sweet vanilla icing that adds just the right amount of sweetness.

And I think that combination of browned butter, cinnamon, and icing is what makes these cookies so good.

Carrie even made a little video breaking one open so you can see how soft they are inside.

Great cookies! And definitely worth making again.

Brown Butter Oatmeal Cookies Recipe

Carrie found this recipe while watching an Instagram Reel and decided to give it a try. I’m glad she did!

Ingredients for the Cookies

  • 1 cup butter, browned
  • ¾ cup firmly packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups quick or old-fashioned oats

Ingredients for the Vanilla Icing

  • 1½ cups powdered sugar
  • 2–4 tablespoons milk
  • 1 tablespoon light corn syrup
  • ¼ teaspoon vanilla extract

How to Make the Cookies

Start with the Brown Butter

Place the butter in a saucepan over medium heat and let it melt, stirring frequently as it cooks.

The butter will begin to foam, and eventually you’ll notice little golden-brown bits forming at the bottom of the pan. Once it develops a rich, nutty aroma and turns golden brown, remove it from the heat.

Let the butter cool slightly before using it in the cookie dough.

Mix the Cookie Dough

In a mixing bowl, combine the browned butter with the brown sugar and granulated sugar.

Add the eggs and vanilla, mixing until everything is well blended.

In another bowl, stir together the flour, baking soda, cinnamon, and salt.

Add the flour mixture to the wet ingredients, mixing just until combined. Then stir in the oats until they’re evenly distributed throughout the dough.

Bake Until Just Golden

Drop portions of cookie dough onto a parchment-lined baking sheet, leaving enough room for the cookies to spread.

Bake at 350°F for approximately 10–12 minutes.

You’ll want the edges to be lightly golden while the centers still look a little soft. Don’t overbake them if you want that wonderful chewy texture.

Leave the cookies on the baking sheet for a few minutes before moving them to a cooling rack.

Add the Sweet Vanilla Icing

In a small bowl, mix the powdered sugar, 2 tablespoons of milk, corn syrup, and vanilla until smooth.

If the icing seems too thick, add a little more milk until it’s the consistency you like.

Once the cookies have cooled, dip the tops into the icing and place them back on the cooling rack to let the icing set.

And that’s it!

Sometimes You Just Have to Enjoy a Cookie

I don’t know whether Carrie will stay on her brown butter baking kick or move on to something else next week.

But I’m always happy to answer that phone call!

There’s something special about a homemade cookie, especially when it’s still a little warm and somebody else did the baking.)))

And sometimes a sweet treat is just that — a treat. Enjoy one, savor every bite, and go on about your day.

Now, if Carrie calls again and says, “Come up and try this,” you can bet we’ll be there!
