My first attempt a few weeks ago was a flop, but todayβs version? A total win! π It had almost the right texture and flavor. But I’m already brainstorming ways to make it even crispier. Also, maybe a little vanilla and cinnamon next time. I canβt wait to keep experimenting! π§β¨
Tweaking the Perfect Low-Carb High-Protein Waffle π§β¨
I donβt want to make this a full recipe post until Iβve had a chance to tweak it a little more and find the perfect combination of ingredients (for our taste, anyway!).
But for this morningβs batch, I kept it simple: one egg, Β½ cup shredded mozzarella, and 2 tablespoons of cottage cheese. It turned out soft, slightly crispy on the edges, and nicely satisfying. I think a touch of vanilla and cinnamon might take it to the next level, and Iβm also playing around with ways to make it even crispier and have more protein.

Balancing Carbs & Protein β The Ongoing Struggle! π₯πͺ
