I don’t want to make this a full recipe post until I’ve had a chance to tweak it a little more and find the perfect combination of ingredients (for our taste, anyway!).

But for this morning’s batch, I kept it simple: one egg, Β½ cup shredded mozzarella, and 2 tablespoons of cottage cheese. It turned out soft, slightly crispy on the edges, and nicely satisfying. I think a touch of vanilla and cinnamon might take it to the next level, and I’m also playing around with ways to make it even crispier and have more protein.
