Last night I baked a high-protein skillet brownie, and while it had a great texture, it wasn’t quite sweet enough for my liking. The hubby. liked it fine!

What I Used in My Recipe 🍫
My high-protein skillet brownie was made with a mix of egg, coconut yogurt, cocoa powder, chocolate protein powder, Swerve sweetener, almond flour, baking powder, salt, vanilla, milk, melted butter, and sugar-free chocolate chips.
It baked perfectly in the oven in a cast iron skillet and looked great! To finish it off, I topped it with whipped cream, sugar-free caramel, and chocolate syrup for an extra indulgent touch. 🍫🍯😋
What Went Wrong & What I Liked
The biggest issue for me with the high-protein skillet brownie was the lack of sweetness—it just wasn’t quite as satisfying as I had hoped. I could easily add more sweetener, but I’d love to find a way to get the perfect balance without overdoing it.
Another thing I noticed was that this recipe had more ingredients than I really wanted to mess with. I’d love to simplify it while still keeping the great texture and structure it had after baking. On the plus side, it baked beautifully in the skillet, and the consistency was just right—not too dry, not too dense. Now I just need to tweak it to make it simpler and sweeter! 🍫💪
How I Plan to Test New Versions
I suspect the lack of sweetness was due to using cocoa powder instead of semi-sweet chocolate. Cocoa powder is unsweetened, so it needed more sweetener than I added. Next time I’ll use more Swerve, it’s my favorite artificial sweetener.
