Roasted Sweet Potatoes with Brown Sugar

Ingredients for this dish are simple!
Sweet Potatoes 3-4
Butter 1/2 Stick
Brown Sugar 1/4 – 1/2 cup
Cinnamon to Taste

Basic Steps

  • Peel 3-4 sweet potatoes and slice in rounds (crossways of the potato) about 3/4″ thick.
  • Line a baking sheet with parchment paper or foil.
  • Melt butter and stir in brown sugar and a dash of cinnamon if you wish.
  • Place potato slices on parchment paper in a single layer.
  • Pour butter with brown sugar over the potato slices.
  • Roast in the oven at 375 to 400° until fork-tender (about 30 minutes or a little longer if you like the edges nice and crispy).
  • Flip slices one time during cooking.
  • Serve hot.
  • This recipe is easily adjustable – more potatoes, increase butter and sugar.

Cleanup

This is one of the simplest ways to roast sweet potatoes, and cleanup is a breeze—just toss the parchment paper or foil! The flavor is similar to sweet potatoes fried in a cast iron skillet with butter and sugar, but these come out tender and without the “burnt edges,” as my husband likes to point out (which might just be my frying skills!). Personally, I love them with plenty of caramelized, sugary crust!
