Cottage Cheese Blueberry Bake β Different, But Delicious! πͺπ
I recently tried making a Cottage Cheese Blueberry Bake, but mine didnβt turn out quite like the pictures I saw in the recipe. Of course, I did tweak the ingredients a bit by adding extra protein powder, which likely changed the texture. Instead of a soft, fluffy bake, mine had more of a bar cookie consistencyβand while it wasnβt picture-perfect, it was still delicious! Plus, each serving packed 15-16 grams of protein, and letβs be honest, finding a tasty way to hit those protein goals is what really matters! ππͺ
Just a few ingredients
- 1/2 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1 scoop protein powder
- 1 cup cottage cheese
- 2 large eggs
- 2 tablespoons honey
- 1/2 fresh blueberries
mix it up – quick and easy!
- Blend oats, protein powder, and cinnamon together until smooth. I used a Ninja blender.
- Add eggs, cottage cheese, honey, and vanilla and blend.
- Gently fold in blueberries
- Pour into a prepared 8″ x 8″ glass dish coated with cooking spray or butter.
- Bake 20-30 min in 325Β° oven, to until toothpick inserted into center comes out clean.
- Allow to cool for a few minutes before slicing into four pieces.
- Serve warm, or room temperature. Drizzle a little bit of honey on top if desired.
Breakfast or Snack? Itβs All About Perspective! π½οΈβ¨
Most Cottage Cheese Blueberry Bake recipes I found were intended as breakfast food, but to me, mine turned out more like a snack or even dessert. While we occasionally enjoy pancakes or waffles in the morning, theyβre usually paired with a side of crispy bacon! π₯π
Even my husband liked it, and heβs not as big on sweets as I am. His other comment? After I mentioned the extra protein powder, he said he couldnβt taste it at allβno aftertaste or anything! This morning, I had a slice with toast, extra fruit, and a drizzle of honey, and it was delicious! π―ππ
What I Might Do Differently Next Time πβ¨
Next time, I might skip blending the oats and instead just mix everything by hand. This could give the bake a bit more texture rather than a smoother consistency. I also used small curd cottage cheese since itβs my favorite, but I wonder if a different variety would change the final result. Either way, Iβll definitely be experimenting to see how small adjustments affect the texture and bake! π«π½οΈ
Storing My Cottage Cheese Blueberry Bake π«β¨
After letting my Cottage Cheese Blueberry Bake cool, I stored it in the refrigerator with tin foil between the slices. This makes it easy to remove a piece and warm it up in the microwave for a few secondsβsans tinfoil, of course! π
When a Recipe Doesnβt Turn Out as Expectedβ¦ But Still Works! π€π
Have you ever tried a recipe that didnβt quite turn out like the picture, but wasnβt a fail after all? Iβd love to hear about it! Sometimes, a little tweak (intentional or not) leads to something unexpectedly delicious. Let me know in the comments if youβve had a baking surprise that turned out to be a keeper! π½οΈπ
