Caramel Apple Cookies: No Pumpkin Spice for Me!

Caramel Apple Cookies are my go-to fall treat! While many people are excited for pumpkin spice, I crave the sweet and tangy flavor of caramel apples. There’s something so comforting about the blend of tart green apple and rich, buttery caramel.

This year, I brought that classic combo into cookie form! Starting with a simple cookie mix, the addition of caramel bits and a fun twist—green apple drink mix—gives these cookies all the cozy flavors of caramel apples in every bite. If you’re looking for a fall treat that’s unique and full of flavor, these cookies are perfect!

Just a few ingredients

The Betty Crocker Caramel Apple Cookie mix includes some caramel bits, but not nearly enough in my opinion!

  • 1 Pkg Betty Crocker Caramel Apple Cookie Mix
  • 1 Cup Kraft Caramel Bits
  • 1 Stick Butter (softened, not melted)
  • 1 Pkg (indv) Skittles Green Apple Drink Mix
  • 1 Egg

Instructions

Just follow the instructions on the package and throw in the extra caramel bits. Mix that up well. Just a little warning…..the dough will turn a bit green with the green apple drink mix. But once the cookies are baked they look fine))

Oven temperatures vary, so bake at what works best for you. The package says 350° for 14-16 min. That’s too much for my oven and I baked mine at about 325° for 12 minutes.

Remove from the cookie sheet and allow to cool.

Note: You live and learn, right? I’ve always used clean newspaper to cool cookies when I ran out of waxed paper, but that definitely doesn’t work with Caramel Apple Cookies! The caramel bits stay melted on the bottom right out of the oven, so it’s best to leave the cookies on the baking sheet to cool or transfer them to tinfoil or parchment paper instead.

  • 1 pkg Betty Crocker Limited Edition Caramel Apple Cookie Mix 16.6 oz
  • 1 egg Egg
  • 1 stick Softened Butter not melton
  • 1 cup Kraft Caramel Bits
  • 1 packet Skittles Green Apple Drink Mix Individual packet

Instructions

  • Mix cookie mix, softened (not melted) butter, and egg. Stir in 1 cup of caramel bits. Stir in one packet of green apple drink mix. Shape dough into small ball and places 2" apart on cookie sheet lined with parchment paper. Back 12-15 minutes until lightly browned. Cool on foil, or parchment paper. Store in covered container.
